Chili lime chicken drumsticks have been myhero this past week. You see, my house sits right on top ofthis ridiculous hill with zero shade, completely exposed. With rain more than half the year, it's usually no issue. The sun and I don't see a lot of each other, but when it does come to pay a visit, there's no escaping it. You can't run, you can't hide, you just have to deal with it. (Kind of like mother-in-laws, hey-oh!)
Don't forget to PIN it for later! ?
As the temperature climbed, my house quickly turned into a fiery inferno. Ihad convinced myself if I even looked towards the kitchen I wouldburst into flames. Since I have yet to accept heatstroke as my fate of death, I've avoided cooking as much as possible.
Turn on the oven? No thanks. Stand over a stove? I'll pass.Sure there are salads, but... meh.
Coming through in the clutch: the outdoor grill.
I got out of my house and enjoyed the sunshine while cooking up something tasty. I made a massive batch of these chili lime chicken drumsticks meal-prep-style on the grill. And since you can fit approximately 500,000 chicken legs on the barbecue, meal prep was a total breeze. We're talking uncomplicated ingredients, minimal clean-up,dinner, lunch, lunch, lunch. I ate these for dinner that night, and they were just as good cold straight out of the fridge over the next few days. Lazy and delicious!
Honestly, I didn't mind eating this over and over. First of all, drumsticks dude. You seriously can't go wrong. I could probably live off of them alone and be a perfectly happy camper. Secondly, repeat meals madefor an effortless way to account for macros. I know for some, eating the same thing day in day out sounds like a nightmare. But if you find something that you enjoy, nothing wrong withrepeating it a few times!

What would be a good substitution for avocado oil? My son is allergic to avocado.

I live in a condo with no balcony for grilling 🙁 do you think this recipe would still work if I baked and broiled the chicken?

Hey there, just a quickie!
Couldn't make sense of fat content listed in chicken for your lime drumsticks, 225g for 512g of drumsticks, that's 45g fat per 100g?? I would've thought there would be no more than 10g fat per 100g for chicken drumsticks (even less when grilled?). I maybe missing something or completely wrong but just wanted to mention it because if people are counting the fat content as listed, they may be using a figure that's 4-5 times higher than it should be and eating this recipe liberally, thus consuming a greatly inflated protein/fat ratio, no small issue for someone trying to keep those ketones flowing!!
Cheers

Oh jeez, you're right. I must have been rushing through making this table and looks like I used the "skin" data versus the meat and skin data and breezed right over it. I updated the table with a link to the data source too. Thanks for catching that and letting me know, it's very much appreciated!

Hi Tasha,
I love the recipe, but how come the nutritional facts don't account for protein per serving?Reply

I integrated everything to a new nutrition label plugin last week and this one didn't import properly. I just went in to manually update the nutrition label, so everything should be up-to-date and accurate. 🙂

Drumsticks bake in 45-50 minutes at 400 degrees F.Reply

If I bake this how long will it take and at what temperature should I bake?
Also if I choose to broil, how long is that as well? I don't live in a place with access to a grill but would like to try this.Reply

We will definitely be keeping these on our new diet menu!!

The nutrition label may be for one drumstick but it does not say that on the nutrition label. Would be more helpful to say that on the label. - Paul
